If you’re growing zucchini then I can just bet you’re up to your neck with it right about now! What’s excellent about it, is that there are soooo many different recipes out there and ways to eat it.
I first fell in love with zucchini when my mom made fried zucchini for the first time. Our neighbor across the street would always grow this massive garden every year. At first, when he was out and we were outside he would bring over different vegetables. And then that turned into him telling us to go and pick whatever. I don’t think we ever really did that. You just feel funny doing that, ya know? But zucchini was always something we got from him. I remember he told my mom to make fried zucchini out of it. Mannnnnn that is still my favorite way to eat it. My mouth is just watering thinking and writing about it.
But if you’re looking for a little less mess and a little quicker way! Try Air fryer zucchini.
Air Fryer Zucchini
I peel the vegetable and then slice it rather thin. For one medium size zucchini, you’ll need:
- One egg
- 1/2 cup Panko
- 1/3 cup Parmesan
- Salt and pepper onion powder, garlic powder, and parsley
Put the egg in one bowl and the other ingredients in another. Then just dip the slices of vegtable in the egg and then the fry mixture. Air fry at 375° for about 12 minutes give or take. At 12 minutes they are soft and just a tad crispy. But you’ll just have to test out the right time for you. Plus I have a $35 air fryer from Dollar General so you might want to take that into consideration on cooking times.

How to Preserve
Please don’t feel overwhelmed when it comes to harvesting zucchini! Remember it’s so easy to preserve for later! Peel and cut to your liking and Blanche for 3 minutes and into ice water for another 3 minutes then store in freezer-friendly containers.
