Hi Chickadees! Welcome to my very first All Flock Feed post! I posted this as an IGTV a couple of weeks ago. But I needed to get my bearings straight here on the blog. I originally just named it the new recipe Wednesdays. But I just wasn’t liking that AT ALL. Too boring for this blog. I needed something that was unique and fit well with the blog. And that’s where All Flock Feed comes in.

These Strawberry Cheesecake Bites are a perfect balance. Sweet but not too sweet, perfect for when you want just a bite of cheesecake (or two or three when you taste these). It’s such a great twist to a normal cheesecake. I really like these because sometimes cheesecake can be a little too sweet and too much. But these were honestly so good. My husband and I liked them so much.

The hardest part for me was hollowing out the inside of the strawberries. The original instructions said to use a knife to hollow out the inside. The knife still worked, I just accidentally cut all the way out. But all the strawberries worked. You only need a regular-sized container of strawberries for this recipe.

A little tip: I let my cream cheese sit out while I was cutting my strawberries.

All the Sweetness

The recipe calls for anywhere between 1/4 cup to 1/2 of powdered sugar. You already know that I went full steam ahead and put the whole 1/2 cup in there. And man is this cheesecake filling sooo good.

Tip: If you don’t have an icing bag and tip, you can use a zip lock bag as I did and so did Alecia from Cooking Made Easy.

It’s not in my video, but the very last step is to smash some cinnamon graham crackers and sprinkle the graham cracker on top of your filled strawberries. Alecia from Cooking Made Easy said if you use plain graham crackers to add some cinnamon and sugar to your cheesecake mixture. You could use regular graham crackers but I think cinnamon graham crackers give you more of that original cheesecake taste.

Ingredients:

  • 8 ounces softened cream cheese
  • 1/2 cup powdered sugar
  • 1 tbsp vanilla
  • cinnamon graham crackers
  • 16 ounces of strawberries

Directions:

  1. Cut the tops off of strawberries and Hallow put the inside out
  2. Add your cream cheese, powdered sugar and vanilla into a bowl and mix together
  3. Pipe your cheesecake filling into your strawberries
  4. Dip the top of the filled strawberries into the crushed graham crackers.
  5. ENJOY
